In the past, samphire (Salicornia), also known as glasswort, was used in the glass industry (to reduce the melting point of glass) and in soap production (its ashes).
As a wild-growing vegetable with a slightly peppery flavour, samphire can be enjoyed raw as a snack or blanched, in a salad for instance. Because it grows in salt water, it has a high salt content. As such, caution should be used when seasoning it with additional salt. Samphire contains many minerals such as sodium, potassium and magnesium, and is a good source of iodine.
