Pea sprouts represent the first stage in the life cycle of a pea plant. Despite their appearance, they’re not related to asparagus, although a certain resemblance is undeniable when they’re harvested.
And they do have a delicate, surprising flavour that is quite similar to green asparagus. The sprouts can be eaten raw or boiled. The sprouts come into their own as salad decoration or as ingredients in spring rolls. Pea sprouts can be used an alternative to mung beans.
