The calendula likely originates from the Mediterranean region. It is one of the oldest cultivated flowers and has long been used as a medicinal plant. Nowadays, calendula essence is used to make ointments to treat skin conditions.
The flowers taste sweet with a slightly salty aftertaste. In a culinary setting, calendula flowers can be added to salads, used to add colour and flavour to soups and cakes, or as a saffron substitute.
