Flat parsley (Petroselinum), also known as Italian parsley, is a very aromatic herb. It is an essential cooking ingredient and one of the French “fines herbes”. Just like curly parsley, flat parsley contains large amounts of vitamins A and C.
Flat leaf parsley can, for example, be mixed with mint, tomatoes and spring onions to make a Lebanese parsley salad known as tabbouleh. It makes a wonderful addition to herb soup or an ideal garnish for dishes.
Parsley is usually sprinkled over food at the last minute to preserve the valuable substances it contains.
Parsley should be stored at fridge temperature.
