Wild garlic (Allium ursinum), also known as ramson or wood garlic, is a popular seasonal herb. It grows primarily in woods and requires a period of frost to be able to germinate at all.
Wild garlic is widely used during its short harvest period. Its most popular uses are in wild garlic pesto, sausages and spätzle. It adds a relatively subtle garlic flavour to any dish.
If collecting wild garlic in the woods yourself, take care not to confuse it with the poisonous plants “autumn crocus”, “arum lily” or “lily of the valley”. Great care should be taken to ensure that only wild garlic is being consumed.
Wild garlic should be stored at fridge temperature.
