Salicornia

Salicornia

In the past, samphire (Salicornia), also known as glasswort, was used in the glass industry (to reduce the melting point of glass) and in soap production (its ashes).

As a wild-growing vegetable with a slightly peppery flavour, samphire can be enjoyed raw as a snack or blanched, in a salad for instance. Because it grows in salt water, it has a high salt content. As such, caution should be used when seasoning it with additional salt. Samphire contains many minerals such as sodium, potassium and magnesium, and is a good source of iodine.

If you are looking to prepare something special, samphire can be made into a samphire pesto.

Samphire should be stored at fridge temperature.
