Galangal, also known as Thai ginger, is Thailand’s answer to well-known ginger. It is bitter and spicy in flavour, with a piney, lemony aftertaste.
Galangal is a commonly-used ingredient in Thai cuisine. First, the root is peeled and then it is finely chopped. Galangal is also well suited to use in pastes and perfectly complements the flavour of coconut milk.
